Savoury or sweet? Healthy alternative to a boring breakfast

My boyfriend wants to eat healthy and squeeze a quality breakfast but he can't eat as bland as me.
You see, I am a creature of habits...if I have to eat the same thing every morning- I have no problem with that.
My preferred  choice is usually just a couple of eggs, some avocado or natural butter and some veg on the side...I know ...very bland , but it works for me.
You see, when I eat high protein breakfast with a nice amount of fats first in the morning , my energy levels stays up for hours.
..and i don't end up being moody...because when I am hungry...I hope God will keep you safe...I can be a cow πŸ˜‚πŸ˜‚πŸ˜‚

But saying that I decided to create something that is easy to implement in a busy lifestyle,  something that does not require too much effort ,time...hustle πŸ˜‚πŸ˜‚πŸ˜‚...and it's not as bland as just eggs lol.

I came up with 2 different versions of muffins
( they can be eaten for a breakfast or just a snack...difference is in the quantity)

Option one : savoury

These muffins are high in protein and healthy fats with a small amount of low GI carbs( meaning - slow release carbohydrate)

Ingredients for savoury muffins are:

1 grated courgette
Handful of mushrooms- also grated
Fresh parsley - chopped
Large handful of fresh spinach - chopped
100g of grated parmesan cheese
1 tbsp of sundried tomatoes
Black pepper
100 g of tri-colour quinoa cooked with 1 chicken cube stock (drained)
2 whole eggs
4 egg whites

Mix all of the ingredients together,
Preheat the oven to 180°C /350 F

Fill your greased muffin tray with it and then place it in the oven for 30 mins.

Option 2 : sweet

For this you will need:

100g of oat bran ( I prefer to use it instead of oats as it's got higher content of fibre in it - meaning - it takes longer to digest it so it keeps you feeling full for longer)
3 tbsp of chia seeds
1 handful of mixed unsalted nuts chopped
1 tsp of cinnamon powder
2 scoops of vanilla protein powder ( low sugar and low fat)
1 mashed ripen banana
1/2 of a large ripen avocado or 1 small one
1 tbsp of sultanas
3 tbsp of natural Greek yogurt ( my favourite is natural stained yogurt from Faye)
4 egg whites
Pinch of pink Himalayan salt
Few drops of vanilla extract (optional)

Mix all of the dry ingredients together.
For avocado ,banana,yogurt, vanilla extract ,egg whites and spices- use blender.
Put all in a container and blend it together.

After that mix both, dry and wet ingredients together.

Preheat the oven to 200°C/400F

Fill up the muffin tray greased with coconut oil .

Place the tray in the oven for 20 mins.

At the end of baking ,use a toothpick to check if the muffins are ready. If there is nothing sticking to the toothpick- you got them just rightπŸ˜‰

Routines that literally changed my life

I have been practicing positive thinking and gratitude for a long time now.
I remember when I made that decision to do it, firstly it didn't feel so good.
It was actually a bit annoying and a struggle as I had this feeling as if I was lying to myself.
I had a lot of different thoughts going through my mind, my ego was kicking in and trying to sabotage my efforts on regular basis.
It kept creeping in saying " common,  can't you see what the reality looks like? How can you be positive with this happening and that happening "....
But I kept my faith and my practice as something within me was telling me to stick to it.
So I did.

To be fair , it didn't take that long at all before I started feeling different.... better!
My ego wasn't so loud anymore so I didn't have this push-pull kind of feeling as strong as at the beginning.
I started flowing with it and it felt good.
Nothing major happened for first few weeks ,but I definitely felt much better.
I started handling stress better and turning negative into positve on more regular basis.
Things that bothered me a lot , became less bothering .
I kind of started getting addicted to this improved emotions so decided to practice more of it.
Morning meditation became a regular thing...quieting my mind, focusing on something not so mentally engaging like my heart beat or breathing ...just being.....
Then I added another element to my morning routine
Started creating in my mind a vision of how I want my day to look like.
I started thanking for things in advance and then getting out of my bed ,starting my day and whatever I had planned for it.
Another thing I started doing was writing a list of things that I am grateful for, each evening before bed I was (and still am) writing stuff down that I want to give my thanks to, focusing on it and getting into this good feeling place...then falling asleep feeling great.

It sounds a lot to start of with , but with a practice it just becomes a second nature.
Like with everything in life,  at first we learn techniques and ways , we focus on every bit of it and after a while , it just becomes a habit other words just natural.

I know that for many people the meditation practice on other techniques like that just sounds weird...however I cannot complement enough how valuable this practice is.

Simply for the feeling you can get from it, ie.
Ease about things, relaxed body and mind, clarity , kindness and increased feeling of connection , balance and love - this is just top of the iceberg.
There is no medicine better in this world than tunning to your own energy source.
The more I practice it , the more I get to realise how powerful and beautiful it the best part of it is : it does not cost a single penny.
And the only side effect you get from it is increased level of happiness...unconditional happiness.

How fitness can help you train happiness

Few weeks ago I met Monika Vrublova, a lovely lady who is on her spiritual path and mission,  helping others on their journey with her own wisdom and experience.

Reason for our gathering was an interview she wanted to do with me - by the way, I am not the only one who had been interviewed by her. She is on a mission of bringing more awareness to the public about other professionals, who are on the same mission as herself.

I feel privileged to be one of them and really happy that we had this lovely conversation.I was able to share a bit of my own knowledge ,passion and real reasons why I do ,what I do.
